If torta is to Argao and the bibingka is to Mandaue, then the queseo is the savory pride of the town of Compostela.

An hour and 30 minute bus ride north from Cebu City, you’ll find yourself in the municipality of Compostela, a town of about 50,000 people. It is known for its swank beach resorts and the popular hiking and pilgrimage site Q Park. But Compostela town is also famous for its distinct delicacy, the queseo – a type of cheese made from fresh carabao milk.

Many families in Compostela get their daily income from the business of processing the cheese and selling them to the local market. Every July, the town even holds a festival that centers around the creamy dairy product featuring a dance that demonstrates the process of milking a carabao.

According to many people online, queseo, also spelled as keseo, is best paired with biscuits and pandesal. Some would even mix the cheese into the rice, making it a unique delicacy that the town of Compostela is very proud of.
